About Judith Rodriguez
Judith Rodriguez is Chairperson, and professor in the Department of Nutrition and Dietetics at the University of North Florida. She received a Ph.D. in Anthropology at Rutgers University and an M.A. and B.S. in Nutrition from New York University. She is a Registered Dietitian. Her interests focus on nutrition education, culture, and underserved populations.
She is involved in professional and community service and is past president of the Academy of Nutrition and Dietetics. She is the UNF 2013 Distinguished Professor, has received numerous recognitions and awards and is editor of the Latino Food Lover's Glossary and The Diet Selector.
